Bring broth to a boil, add quinoa, and lower heat. Cover and simmer 13 minutes. Remove from heat and transfer to a large bowl to cool, fluffing with fork occasionally. In another bowl, add all the other ingredients, mixing in the quinoa only after it has completely cooled. Best if allowed to sit for a day or so in the fridge.

For the Meatballs:
Mix ground beef, egg, soup mix, and bread crumbs. Form mixture into 1-inch meatballs. Brown in 400 degree oven.
For the Sauce:
Heat sauce until blended. Put meatballs into sauce and bake at 350 degrees for 30 minutes. Serve.
Sauce can also be served over chicken, ribs, or other meats.

Mix all ingredients. Pour into a 9 x 13 x 2-inch casserole. Cover with Ritz cracker crumbs; dot with butter.
Bake at 350 degrees for about 30 minutes, uncovered. Don’t put crumbs on until ready to bake.
May be frozen but do not bake prior to freezing.
